    Fennel (Saunf) is one of the most useful herbs in an Indian kitchen garden. The feathery fronds flavour curries, the stems add crunch to salads, and the seeds serve as both a cooking spice and an after-meal digestive.

    • Feathery, anise-scented fronds and seeds used daily in Indian cooking and as a digestive.
    • Rich in vitamin C, fibre, potassium, and antioxidants.

    Germination
    • Seeds sprout in 7–14 days.
    • Keep soil moist during this period.
    • Once sprouts appear, thin to 30–40 cm apart.
    Transplanting

    NA - Fennel dislikes transplanting. Always direct sow where it is to grow.

    Growing
    • Needs 5–6 hours of sunlight daily.
    • Water with a gentle spray when the topsoil feels dry. Fennel prefers moderately moist soil - don't overwater.
    • Use a deep pot (at least 30 cm deep) with drainage holes. Fennel has a deep taproot.
    • Space plants 30–40 cm apart.
    • Feed with cow manure every 20 days. Use neem cake and neem oil spray if pests appear.
    • Keep fennel away from dill, coriander, and tomatoes - it produces compounds that inhibit nearby plant growth.
    Aftercare & Post-Harvest
    • Fennel bolts quickly in rising temperatures. Harvest fronds before flowering for the best flavour.
    • Once it bolts and flowers, harvest fronds immediately - the flavour changes after flowering.
    • Allow some plants to go to seed and collect saunf for cooking and for re-sowing.
    • Sow fresh the following October for the next season.
    Harvesting
    • Fronds are ready in 40–60 days. Snip as needed, leaving the main plant to keep growing.
    • For seeds (saunf), allow flowers to bloom and set seed heads. Harvest when they turn brown and dry.
    • Use leaves fresh for the best flavour - fennel's aroma fades a little when dried.
